Portuguese Kale Soup (Caldo)

 

INGREDIENTS

2 bunhes of Kale
2 pounds spicy Portuguese sausage, sliced
1 pound ham hocks
1 onion, sliced
2 quarts water
3 potatoes, diced
2 (15 ounce) cans kidney beans or 2 cups dry kidney beans

 

DIRECTIONS


In a large pot over low heat, combine sausage, ham hocks, onion, kidney beans and water. Cover and simmer 30 minutes hour.

Add kale and diced potatoes.  Cover and simmer for 60 minutes.
