Cerviche
Shrimp Seviche
2 pounds of shrimp
approximately 10 lemons
1 hot pepper
1 chopped onion
1 teaspoon salt
Put raw shrimp in boiling water for 5 minutes. Remove and
place in cold water immediately. Remove shells and clean shrimp. Place in a
glass bowl with the lemon juice, the onion, pepper, and salt. Let it set for
1 hour and serve. (Franco)
